Anyone who isn’t a millionaire likes to get the most bang for their hard earned dollars (even most millionaires enjoy a good deal). I am not blogging about money here, though. If you are trying to lose weight, it might help for you to think of calories as dollars (every calorie you consume is viewed as a dollar coming out of your pocket). Okay, but why is this going to help me? If you have kept up with my previous blogs, you know that if you want to lose weight you have to consume less calories than your body burns. You probably didn’t even need me to tell you this the first time. Your body requires a certain amount of vitamins and minerals regardless of how many calories you are consuming. This means that if you reduce your daily calorie consumption, you are going to have to get more vitamins and minerals for every calorie that you consume. Now I want you to use the calorie/dollar analogy. For every calorie/dollar that you spend, you want to get the most vitamins and minerals for those calories/dollars. This is important because a vitamin and/or mineral deficiency will at the least cause sub optimal performance (whether physically or mentally). For a lot of my life, I have been passionate about three things. Food (especially baking), the environment, and having fun! The first two were things I wanted to make a difference in the world with. The last one was the result I wanted out of being in this world. I was a lot more passionate about the environment when I was young. I was a vocal (kind of loud, too) proponent of recycling and cars with good mileage. I was an opponent of logging, oil drilling in certain parts of the world, coal burning for energy. And I still am adament about those feelings. Although something shifted for me. It somehow became less important that I make a difference in my own life with these things, and subsequently I stopped talking about them and making a difference in other people’s lives. Honestly, I think I started having too much fun. Life in Los Angeles demanded a whole new set of skills and posessions that Pennsylvania didn’t. I started to think that “I couldn’t make a difference” in a world this big. More than anything, I was asleep, and in denial of the allegiance I owe to making a difference in the environment. Here at Mäni’s, we are continually changing our habits to be more envrionmentally friendly. We have ramped up our recycling efforts tremendously, we have gone organic on our fresh produce and vegetables, and we are constantly looking to do more. Being aware of our civil duties, and enrolling others in living a life in balance with the environment, and protecting the earth is immensely important. Today was a busy Friday lunch at Mäni’s complete with 10 to 20 minute waiting list. As I scurried around to make sure guests were enjoying themselves and our new summer menu, I must have seated several dozen people. Being born and raised right here in LA, (even went to Fairfax High!) I usually don’t recognize celebrities. And since Mr. DiCaprio was wearing sunglasses, I didn’t recognize him either. It was only after he left and the staff (mostly female) we’re all excited to have seen him. But as many of you know, Mäni’s often has celebs dining with us, so I wasn’t really thinking of writing about this, but then I googled him and found out about some similar passions we share. On his website, LeonardoDiCaprio.com, it clearly shows his dedication about healing the planet and his efforts on Global Warming. Just this week I saw Al Gore’s An Inconvenient Truth and was very moved. Mäni’s has just gone organic on all our produce. So suddenly all these ecological events just occurred for me. Earlier this week we did tasting and training sessions for the new “It’s All About Summer” menu. The Mäni’s team members tasted and learned about every new item. So, please ask them for their thoughts and opinions during your next visit. Everyone is excited and ready to share. Here is a summary of what is new on the menu: 3 new delicious summer salads, a Breakfast Parfait, a new Lemon cake, and 2 scrumptious cold soups. Here is a summary of what is in the brand new 400 Calorie menu: 2 tasty omelets, 2 amazing scrambles, 2 yummy wraps, and a pita. And finally there are 3 new “It’s All About Summer” drinks: Watermelon Juice, Mint Lemonade, and a Pro Green Shake. (The shake is also a part of the 400 Calorie Menu.) A funny thing happened when the tasting with the team members was over each day. The way it works is that our incredible Chef Jose puts together a plate of each new item in order for the team members to see the presentation. Then he creates mini-portions for each of the team members to taste. It is an awesome way to taste a lot of food and not get too full. It was comical to witness what occurred when the tasting was complete. The team members liked the new items so much that as soon as we were done they rushed the table at the front and immediately started snatching up the preview plates (the full portions of the food we were tasting) to eat them. It was quite a mob scene. Here is the embarrassing part of this story. I was right there with them. And the item I was reaching for was the new Breakfast Parfait. This item is amazing, refreshing, and filled with incredible tastes. Here is how it is presented: Breakfast Parfait Healthy and stunning breakfast with vanilla yogurt, carrot-orange reduction sauce, our famous homemade granola, fresh peach, fresh cherries, and banana. When we first opened on Fairfax in 1990, some were surprised about the flavors and textures of our products and many found it refreshing to find such tastes also good for you, made with wholesome ingredients including organically grown wheat flours. Then in 2000,we became not only a bakery but a restaurant as well, offering even more food that tastes great and healthier than food and baked goods at traditional restaurants and bakeries. We’ve spent the last few days training many of our 35 staff in our new summer menu. Tomorrow, the first day of summer, we launch into our summer menus packed with fresh, wholesome, refreshing soups, salads, sandwiches, appetizers and breakfast and drinks with organically grown fruits and vegetables that taste amazing! But don’t take my opinion, come in and try it yourself. We’re also offering a brand new menu, which is balanced between the three macronutrients; carbs, lipids and protein. We carefully designed this menu to give you a 400 calorie option, based on eating 4 to 5 meals and snacks a day. Many of these items are based on selections from our regular menu, so you’ll find similar great flavors and ingredients like our marinated chicken, breakfast scrambles and select salads. The menu has been a collaboration between our fitness and nutrition consultant, Garrett Cooke and our Chef Jose Aramayo. The new 400 calorie menu is a real easy way to learn how to take control of your body weight. We, at Mäni’s Bakery, have done the hard and sometimes tedious work out of the equation for you by providing you with already structured meals. All you need to do is give it a try. What exactly will I learn? Well, that is completely up to you. Your answer will depend on how you decide to incorporate the new 400 calorie menu items into your Mäni’s dining experience and daily eating plan. The full learning experience will come from incorporating the concept of eating 4 to 5 smaller meals throughout your day. By using the items that Mäni’s is providing, you don’t have to worry about measuring or cooking anything while trying to initially incorporate this new eating style. All you will have to worry about is spacing your meals 3 to 4 hours apart. How long you decide to commit to this kind of regiment is completely up to you. Regardless if you just experiment with these structured items or this way of eating becomes a complete lifestyle change for you, there are a number of things you can learn about your individual needs. First, when eating so frequently throughout the day your stomach should never feel full or hungry. There is a difference between wanting to eat because you are hungry and because your mind wants to eat. Recognizing this difference will become invaluable when starting to eat smaller more frequent meals during your day. Second, you will learn pretty quickly how much you really need to eat daily. You can only learn this if you keep structured to eating every 3 to 4 hours. If you can’t manage to eat every 4 hours because you are too full, 400 calories at every meal is too much for you (in this situation every meal should be followed up with a snack that equals 1/2 a meal). If you are getting hungry (physically not mentally) before 3 hours has elasped, then you need to eat more every 3 hours or move your meals to every 2 1/2 hours. Once you have learned the schedule that works for your individual needs (remember that no two persons on this planet are exactly the same), you have really learned something valuable. What have you really learned? Think about it. Even though you haven’t been preparing and measuring your food, you now have a pretty good idea of how much you should be eating and when you should be eating that food. These two simple aspects of nutrition is where I see almost everyone fail when they are trying to manage their weight. I don’t expect people to measure everything that they eat. Just by eating controlled portions for as little as a few weeks, your eye will have a recognition for how much you need and how much is too much. This is what I like to call portion control. Portion control and eating intervals are the key to proper nutrition. Now you have a simple way to learn for your own individual needs both of these. Take control of what most Americans think is almost rocket science. It really isn’t that complicated, at all. It will be even easier with the new 400 calorie menu. Enjoy!!!

As many of you already know, Mäni’s has used many organic ingredients in our products for years, such as organically grown flours in our fresh baked breads and desserts, pure maple syrup for our multi-grain pancakes, organic palm oil in our baking, organic coffees and teas and other select organic ingredients. But now we’re making a significant committment to using certified organic fruits and vegetables. Here is Chef Jose working on our new menu which will be released next week. The new menu is All About Summer! We’ve been working on items with the best fresh and healthy ingredients we could find. We’re spending lots of time on rolling out the new menu, training our employees, and perfecting everything for the first day of summer. Our menu will be launching on Wednesday of next week, and will include a new section on items that balance nutrition, stay within certain ranges of calories, carbs and proteins, and provide an opportunity to maximize your energy through smaller and more efficient meals and snacks. We are really excited to share everything we are developing, and start to create summer with you. We have a wonderful community of customers and employees who have contributed to this and look forward to sharing it with you, so thank you!

Incorporating any new change into your life takes a little bit of work. In the beginning it will take a little bit of planning, but before you know it your new eating schedule will become a habit. Because most of us are beings of routine, it won’t take long before eating four to five times a day will be second nature to you. You are going to have to take the initiative to plan atleast some of your meals for the day. This doesn’t mean that you have to physically prepare all or any of your food, but it does mean that you have to be prepared with healthy options. You can pick easy items up at the grocery store, you can take leftovers from dinner the night before, you can buy already prepared meals, etc. Whatever you choose, it is your responsibility to take the few minutes to always have something nutritious available for you to eat. This way you won’t find yourself at the mercy of poor options when it comes time for you to refuel your body. My number one suggestion would be to have a pretty consistent schedule day in and day out for when you eat. This way your eating times will become routine. If you have a consistent time that you eat lunch everyday, it would probably be best to schedule the rest of your meals and snacks around this time. For instance, lets say you eat lunch everyday around 1 o’clock. If this is so, then you are going to want to have a snack around 10 am (3 hrs. before) and have breakfast between 6 and 7 am (3-4 hrs. before your snack). You would do the same thing for your afternoon meals, as well. Since you ate lunch at 1 pm, your mid day snack would ideally be between 4 to 5 pm (this snack is going to be even more important for those individuals that decide to workout in the evening after work) and dinner would be no later than 8 pm. Some people see eating 4 to 5 times throughout the day as an inconvenience. I bet some of these same people don’t have any problem taking 5, 10, or even 15 breaks to smoke a cigarette during the day. Personally, the more times I get to eat during the day the happier I am and the better I feel. Remember that eating more times doesn’t mean eating more food. You have to prioritize what is really important to you. If you are interested in improving your eating habits, incorporating smaller more frequent meals into your day is a pretty small inconvenience (and I am only saying inconvenience because we are talking about just starting this routine, after it becomes routine it will be second nature) for the results it will yield.

The most fundamental aspect of weight management (whether your goal is weight loss, weight gain, or weight maintenance) is understanding how many calories your body burns daily (daily caloric expenditure) and how many calories you consume daily. Knowing your daily caloric expenditure provides you with one of two most important pieces of information for you to work towards your weight management goal. The following link will help you estimate your daily caloric expenditure. Now, in Part 2, I am going to help show you how to calculate the number of calories you consume on a daily basis.

Eat more frequently while increasing your metabolism. Sounds too good to be true, doesn’t it? It is scientifically proven, but people seem to ignore or not believe that it is true. Just think about it for a second, I am telling you that you should be eating at least four if not five times during your day. Yes, you can eat more often while burning more calories without any extra exercise (just imagine what the combination of regular exercise and eating smaller more frequent meals will do to your metabolism). You have to forget the motto of eating three square meals a day. First, you have to understand the food you eat is what provides you with the energy that your body needs to function. Your nutrition is what fuels your body. If you want to function optimally, you need to fuel your body to function optimally. By eating four to five smaller meals every three to four hours throughout the day, your body receives a steady flow of energy that it can run on. The human body is amazingly smart. If your body knows that it is going to be fed every three to four hours, it can keep your metabolism burning in high gear because it is at most four hours from being refueled. The complete opposite happens when your body is used to being fed less frequently. If your body knows that it is not going to be refueled for five or six hours or even longer, it keeps your metabolism on slow to protect against running out of fuel before the next meal. If you go really long between meals, your body will actually turn your metabolism as far down as it can and also store as much of the food away for use later. Storing away energy means one thing, more body fat. Yuck! Why does your body do this? Basically, this is the way that your body protects itself from starvation (the human body has worked this way for thousands of years). All you need to do is take the normal amount of food that you eat everyday and spread it out over four to five feedings. This alone will cause your body to burn more calories over the course of a day. Just remember you are reallocating the same amount of calories that you usually eat throughout the day, not more.

There are 4 new faces at Mäni’s. They all have gone through an extensive selection process, spent a week learning about the philosophy and approach to healthy eating and living. And now they are out on the counter learning to make our Mocha Lattes, Matcha tea, and the awesome Sambazon Acai smoothies. (Speaking of the Acai smoothie, have you tried it? It is really good and a great way to boost your energy.) Jamie is a USC student and loves to rock climb. She has only ever had rottweiler dogs. She is still talking about the Tofu Scramble Hash. We almost converted her to a vegitarian with just that one item. Stephanie is a USC graduate. Her major was psychology with a minor in dance. Her sister lives in New Orleans. Her favorite food is peanut butter. And she is from Florida. Her favorite Mäni’s items are the Black Bottom Bananna Tart, Chocolate Duo cake, and Velvet Tea. “All at once!” Craig is a USC student. He will be working this summer on a CBS prime time series as an associate sound designer. He is from Austin, Texas. And he has 2 IPod’s with over 100 GB of music. Christian is studying at the Kitchen Academy. He found out he loves to decorate cakes when his mom and sister took a cake decorating class. (He did all thier homework for them.) If stranded on an island, the three CD’s he would take are: Janis Joplin, Billy Holiday, and Mozart Requiem. He is from Long Beach. The 5th face in the picture is Sherry. We are sad to say she had to head back east for the summer. Last Thursday, our five new retail trainees and our current retail staff spent an hour and a half being trained and re-trained by Steve Schwartz and his associate David, from Our exclusive tea purveyor, the Art of Tea. It’s wonderful to work with someone who’s passionate about what they do, as is Steve. He travels the world the find wonderful teas and brings them back home where we can all enjoy them. Come by anytime, day or night until midnight (1:00AM on Fridays and Saturdays) and enjoy a wonderful brew of an exotic tea. HERE’S SOME VIEWS FROM OUR STAFF ON THIS SUBJECT: Here at Mäni’s, I garner new worldly opportuniteies on a daily basis. For instance, this past Wednesday I had a conversation with a first-time guest who was visiting from Japan for her sister’s wedding. Not 3 hours later was I learning more about Japan, this time from a nice man named Steve who is both a regular at Mäni’s and the cafe’s resident tea supplier and conneseur. I was accompanied by about nine of my fellow team members for a tea tasting of sorts while learning about the varietals we serve at Mäni’s. Most intriguing, Steve indulged us in brewing tips as well as the ancient history of our Japanese teas. I never though I’d have such an opportunity, but now I feel both enlightened and more cultured than the day before. I can now sincerely say that I can’t wait for work tomorrow!! --Craig Saper The tea training was really cool. I’ve been a tea fan for quite some time now, but I’ve never been fully enlightened in the wonderous ways of the tea leaf until now. for example, I never knew that white tea, like the Silver Needle tea that Mäni’s carries, is dried but not roasted like green and black teas. It is processed the least, so it contains the most antioxidants. Plus, it tastes great, too. Try some the next time you’re in Mäni’s—Steph I love our assortment of teas at Mäni’s. Before I started working here I knew absolutely nothing about teas. I have learned a great deal about our wonderful teas. Flavors, decaf vs. caffeinated, blends and tisanes and the ever popular matcha. My favorite would have to be of course the velvet tea. With a taste of chocolate combined with mint leaves, almonds and organic rooibos, the velvet tea is perfect for what summer has to offer. --Juan

The new 400 calorie menu items are targeted to provide balanced nutrition options for our customers. With a macronutrient breakdown of 40-50% carbohydrate, 30-40% protein, and 20% fat; these meals will provide a healthy mix from the three different types of macronutrients. Each type of macronutrient is vital to the optimal health of the human body (realize: health is much more than the physique that is seen by the human eye, it goes much deeper than that).
