Wax Orchards is a wonderful company located in Washington state that makes natural fruit sweeteners. These recipes are quite similar to the blends of fruit juice reduction we use at Mäni’s to make many of our desserts and snacks. In additional we’re carrying syrups and fudge sauces have at home on all kinds of foods. Come by and check them out. Wax Orchards was founded in 1920 by August and Johanna Wax. With origins in fruit farming, the family began processing upscale natural foods in 1981. We pioneered the use of concentrated fruit juices instead of sugar and coined the term “fruit sweetened.” This led to the production of unique preserves and toppings that filled the niches shown above and brought nationwide attention from the media. Wax Orchards Fruit Sweet® and Pear Sweet™—natural fruit sweeteners—provide the basis for our entire product line. Our fruit-sweetened preserves and condiments contain only fruit. The result is unusually fresh, intense flavors as well as fiber on the nutrition label, unusual in preserves. The sugars on the nutrition label are the natural sugars in fruit, a complex blend. The American Diabetes Association featured Wax Orchards products in their “Gift of Hope” holiday catalogues for the eight years that they were printed. USA TODAY: “Delicious all-natural fruit butters, toppings, sauces ... luxuriously thick and fruity.” DALLAS TIMES HERALD: “A no-sugar fudge sure to fill our sweet dreams. Even joggers stop for this one, a hot fudge with no refined sugar in it.”

It’s not a coincidence we’ve created a bakery restaurant where I love to eat. I have lunch here five days a week. I usually eat breakfast at home, before coming to ‘work’. But often I have a mid-morning snack at work. Today I had the banana nut muffin which our fab pastry chef, Kristina has recently re-designed. I almost always look for snacks that are made with whole wheat or whole grains. Why? Because then the snack is not just dead calories, but it’s nutritious, meaning that I’m going to get a real energy infusion. To me, it’s the best way to enjoy food and eat what’s good for my body. I guess that’s how we came up with our simple, true slogan: “Good, and good for you” Enjoy!

I found it interesting, to say the least, about comments made on yelp.com. There’s almost 60 of them, some wonderfully complimentary, others critical in certain areas. All in all I believe there’s tremendous value in sharing information. Although positive feedback is great, constructive criticism is helpful to be told what needs our attention. In any case I think you may find this entertaining and some useful info from other Yelp commentators.

This apple cake, is one of our most popular because it tastes great and is VEGAN and Wheat-Free. It was discontinued last year due to an ingredient, non dairy cream cheese which become unavailable from our supplier. That disappointed many of our customers who really liked it’s gourmet quality and complex flavors. But it’s back now and hopefully here to stay. The cake looks the same, and the taste difference with the new ingredient, tofutti, is negligible. Still available in any size and buy the slice.

Yvette and friend (eeks I forgot his name!!) recently re-located to LA from NYC. They found us through a green site, I think it was greentopia? Anyway I need to connect with them again to get all their info. But the point of all this is that because of Valentine’s Day, a holiday week-end, we had almost no selection left in our bakery cases. So I grabbed a peanut butter cookie hot out of the oven and smothered it in our barley malt sweetened choclate. I wanted to make a good impression on these new Angelenos. They loved the cookie. Hope they comment on this story so I can get all my facts correct!

Judith Ramirez first went to California School of Culinary Arts for Baking and Patisserie in pursuit of learning to make delicious pastries that would be health conscious and good for the heart. From there she transferred to Scottsdale Culinary Institute to get her BA in Hospitality and Restaurant Management. Her life long dream brought her to intern at Mäni’s Bakery Café where she works in the back of the house using her baking skills and in front of the house where she is able to use her management skills. She works in both ends to gain appreciation and understanding for those who work in the back with 350 degree ovens and those who work in the front that have great spirits which transcend to the guests. That’s what keeps Mäni’s on Fairfax guests coming back; the smiles and delicious health conscious pastries.

FOR IMMEDIATE RELEASE MÄNI’S ON FAIRFAX MAKES dineLA RESTAURANT WEEK DEBUT Hollywood eatery-to-the-stars invites LA to take a bite of their specially priced lunch & dinner menus during two-week event Los Angeles, CA (January, 2008) – Mäni’s on Fairfax, http://www.manisonfairfax.com, the celebrated café specializing in deliciously healthy baked goods and cuisine, announced its dineLA Restaurant Week debut. The annual event introduces diners to the vast array of restaurants in neighborhoods throughout Los Angeles County for two consecutive weeks: January 27 – February 1, 2008, and February 3 – February 8, 2008. Known for pioneering the guilt-free dessert movement with their wholesome cooking free of additives, artificial sweeteners and preservatives, Mäni’s is much more than just a bakery. The café offers breakfast, lunch and dinner using the same philosophy applied to its sought-after sugar-free sweets: nutritious versions of gourmet foods for the health conscious foodie. “Participating in dineLA Restaurant Week officially puts us on the culinary map.” says founder and CEO Larry Maiman. “We have been taken seriously as a bakery for years and we’re ready for the restaurant to get the same attention. Customers will have diverse options for first, second, and third course fare, priced at only $15 for lunch and $25 for dinner. The extensive menu can be mixed and matched for infinite possibilities. Appetizers such as Mäni’s famous Vegetarian or Turkey Chili, fresh soup of the day or Caesar salad caters to any appetite. Since 1989 Mäni’s on Fairfax has been satisfying discriminating palates and sweet-tooths alike. The restaurant has become a favorite for the Hollywood community and is frequently called upon by industry A-listers as the dining spot of choice. Offering a comfortable and engaging environment, the café is the perfect backdrop for LA dining at its best. In 2005 Mäni’s responded to growing customer interest by launching http://www.manisblogcafe.com, an educational site dedicated to offering nutritional, lifestyle and health information about Mäni’s cuisine. The blog also allows Mäni’s guests to interact with their opinions and feedback. The restaurant’s uncompromising commitment to providing wholesome gourmet food made from the most high-quality ingredients has resulted in its simple motto: Good & Good For You.
