Our Purveyors and Vision Behind Mäni's Teas and Coffes

At Mäni’s Bakery Café, we seek out purveyors of fine tea and coffee that have a similar vision in both their approach and methods while maintaining a level of quality that we ourselves work hard to put into our own products.  This means we seek out organic products as much as possible and products of such a high quality that we think you, our valued guests, will appreciate.

We get our organic tea from “The Art of Tea” owned and operated by Steven Schwartz.  Steven studied in preventative medicine at the Ayurvedic Institute in New Mexico directing him to become a leading purveyor in organic specialty teas.  Steven has traveled in Asia, Africa, and the Middle East and over time developed relationships with farmers and distributors in order to provide us the very best organic artisan teas.  And just as it is important with our coffee purveyors as well, Steven takes the effort to ensure that the employees involved and the product itself are both treated with great respect.

Mäni’s gets coffee from two sources: Groundworks Coffee and Café Britt.  Groundworks chooses the highest specialty-grade Arabica green beans which are hand roasted in traditional drum roasters, one batch at a time, producing the finest cup of coffee possible.  They are committed to ensuring quality and sustainability through relationship coffee sourcing.  This practice supports all progressive coffee standards including environmentally friendly, fair trade, shade-grown, and organic coffees.  Their business aims to continually improve the quality of their coffee and the quality of life for their growing partners.  And just like Mäni’s, their business aims to raise the quality of life in the communities where they live and work.

Café Britt was the first gourmet coffee roaster in Costa Rica.  What they noticed was all their high quality coffee beans were being exported while none of it was available to their own communities.  They changed this by opening up their own roasting facility in Costa Rica.  They are located high in the mountains where they have a perfect combination of sun, rain, and rich volcanic soils for producing exceptional quality coffee beans.  Café Britt, with this perfect climate and terrain for growing Arabica coffee, while hand picking their beans, and using organic fertilizer to provide for all the minerals required by coffee trees, provide us an exceptional Costa Rican “House Coffee” that we brew for our guests daily.
