One of the
highpoints of the Thanksgiving holiday is FOOD --
lots of it. Most families have their
favorite traditional dishes and often that
includes dishes that are high in carbohydrates.
If you eat lots of foods like bread, potatoes,
pasta, etc., you may be interested in knowing
about the Glycemic Index.
We've done some
research and found an excellent website with
information about the
Glycemic
Index and the benefits of diets with low GI.
The website belongs to the University of Sydney,
the leading authority on GI research.
What is the Glycemic Index?
The glycemic index is a ranking of carbohydrates
based on their immediate effect on blood glucose
(blood sugar) levels. It compares foods gram for
gram of carbohydrate. Carbohydrates that
breakdown quickly during digestion have the
highest glycemic indexes. The blood glucose
response is fast and high. Carbohydrates that
break down slowly, releasing glucose gradually
into the blood stream, have low glycemic
indexes.
Benefits of a low GI diet are many: help people
lose weight, improve diabetes control, prolong
physical endurance, and improve the body's
sensitivity to insulin.
On
the site is a database in which you can enter a
food item and you will get a response back about
the GI of the food. There are also some tips
about how you can switch to a low GI diet.

• Use breakfast cereals based on oats, barley and
bran
• Use "grainy" breads made with whole seeds
• Reduce the amount of potatoes you eat
• Enjoy all types of fruit and vegetables (except potatoes)
• Eat plenty of salad vegetables with vinaigrette
dressing
